A farm in Upper Brynamman impressed Hairy Bikers duo David James Myers and Si King with its award winning charcuterie products whilst they were filming for their current BBC series Go Local.
Andrew and Liz Baker, founders of The Baker's Pig - Welsh Charcuterie and Smokehouse are passionate, self-confessed foodies who have transformed their love of pigs, wellies and the great outdoors to create a successful farm-to-fork food business.
They manage a free range, rare breed of Berkshire pigs, and use the pork to manufacture cured meats and slow-fermented salami in a modern production facility on the farm.
“We had lots and lots of fun filming with The Hairy Bikers,” said co-founder Andrew.
“We were really nervous on the morning of the filming, waiting for Si and Dave to arrive. However, from the moment they got off their motorbikes and greeted us, they put us at ease.
“They are exactly the same on camera as they are off camera - really lovely, genuine, down-to-earth guys who love riding motorbikes.
“The day’s filming required us to take The Hairy Bikers through the process we follow when making our delicious Nduja (Italian-style spreadable salami).
“Making Nduja can be a pretty messy endeavour at the best of times and, enlisting the help of Si and Dave only added to the chaos!”.
Andrew and Liz create a range of air-dried, fermented and smoked meats at Ty'r Cwm farm, which they bought in 2011, and have both worked hard to re-instate a traditional farmhouse property that dates back almost 200 years.
Once owned by the Amman Valley Iron Company, Ty'r Cwm farm can be found nestled at the base of the Black Mountain. Although the land had not been farmed since the mid 1970's, local residents still have very fond memories of it as a traditional working farm.
“Throughout the two days of filming it was clear to see how genuinely enthusiastic they both are about discovering great tasting food and its provenance,” added Andrew.
“They were particularly interested in seeing the whole charcuterie making process from the raising of our own rare-breed Berkshire pigs, to the butchery and manufacture of our air-dried products.
“Si and Dave thoroughly enjoyed the final tasting part of the process - and we can't blame them for that.”
For more information on the ingredients used in The Hairy Bikers recipe, The Bakers Pig has put together The Hairy Bikers Complete Ingredients List that contains all three charcuterie products used in the recipe on its website thebakerspig.com.
The first episode of Hairy Bikers Go Local series visited the Michelin-star restaurant Home, run by James Sommerin and his daughter, Georgia, in Penarth and its Welsh suppliers: The Baker's Pig in Upper Brynamman, the Peterston Tea Estate in the Vale of Glamorgan and Wye Valley Meadery. It can be streamed on BBC iPlayer.
